Boiled Hubbard Squash with Cream Sauce
Rich and savory, this recipe brings out a whole new side of squash.

- Hubbard Squash, seeded and sliced.
- Salt & pepper
- 1 medium onion, diced
- 2 Tablespoons butter
- 1 Cup sour cream
- 1/2 Teaspoon dill seed
- Cut squash into big pieces.
- Boil in salted water for 15 minutes, drain and sprinkle with pepper.
- Make a cream of onion, butter, sour cream, dill seed and 1/4 Teaspoon salt.
- Pour over squash.
